Individual Apple Tarts

We're back after a very relaxing weekend and are back in the swing of things prepping for our dark, mysterious forest themed wedding. It's going to be something you've never seen before and we couldn't be more excited!!

Today we want to bring you a dessert dish that is perfect for any holiday party - individual apple tarts. A few weeks back we went apple picking and came home with a 15 pound bag full of apples and had no idea what to do with them (we got caught up in the fun of picking and didn't think about the end result - a 15 pound bag of apples. Yeah.) except use them as decor for our fall events. Yesterday I decided to make use of this bag and bake some individual desserts. The recipe is super easy and here's how it's done:

You'll need:
Dough - 2 cups of flour
2/3 cups of butter (chilled)
1 tsp of salt
6 tbs of water
Filling - 5 medium apples chopped up into small cubes
- 3/4 cup sugar
- 2 tsp cinnamon
- 6 tbs flour
- 2 tbs butter chilled
- juice of half of a lemon

To start - preheat the oven to 425 degrees

In a food processor combine flour, salt, and butter - pulse rather than blend until the ingredients combine and look like large crumbs. Then slowly add 6 tbs of water (one tbs at a time) until the ingredients stick together. Remove mixture from food processor and combine by hand.

Take the ball of dough and roll out on a floured surface, cut into 12 circular pieces (4 inches in diameter) and press into each muffin section to form mini bowls (no need to grease pan).

Then combine all of the filling ingredients (mixing by hand) and scoop into each muffin bowl.

Use remaining dough to create a decorative top (grid, solid top, etc) and place on top of the apple filling.

Place into the oven and cook for 16-18 minutes, until the dough starts turning a light brown color.

Let it cool and then just scoop out each bowl for individual size desserts! Here's our result:
